Terroir: Located on Sandy hills within a proximity of 5 kilometres from the sea, the ?natolikos vineyards practices organic viticulture and are able to produce 400-500 kilos per acre
Ageing: Pre-fermentation and fermentation in oak barrels of 225 litres openly with indigenous yeasts, long fermentation at controlled temperature and pressing the marc by hand. Maturing with lees for 18 months in French oak barrels. The wine is bottled unfiltered and without any other treatment
